Muffin Ingredients :
- 1/2 cup sugar
- 5 tablespoons unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup fat-free skim milk (that's where the naughty comes out!)
- 4 large mashed, ripe bananas (I used 3 and they still tasted good...
- 1 cup powdered sugar
- 1 tablespoon unsalted butter, softened
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 teaspoons water
- Preheat oven to 350 farenheit (176 celcius), line a 12 hole muffin tin with paper or silicone liners...
- In a medium bowl combine all of your dry ingredients.
- In a separate bowl combine butter and sugar, use an electric mixer to mix it until it is light and well combined. When the butter and sugar is done add the vanilla and the egg, mix until everything well incorporated...
- When butter mixture is complete put in half of the flour mix in to the butter bowl, beat well with mixer. After you mixed that add in the rest of the dry ingredients and the milk... Mix well.
- Then fold in mashed bananas
- Spoon the batter in to the liners
- While the muffins are baking you can now work on the icing! Combine all of the ingredients and mix well with the mixture until it reaches a thick soupy consistency...
- Bake for 25-30 minutes, after 25 mins stick a tooth pick in the middle of each muffin and see if it comes out clean. If clean the muffins are ready!
Cool muffins for about 4 minutes then start icing them and ENJOY!
